Under the theme “The Day of Hue Beef Noodle”, the city’s signature dish takes center stage throughout the Hue - Culinary Capital 2026 program. In addition to Hue’s iconic specialty, the event’s 80 food stalls invite visitors on a flavorful journey, bringing together the finest culinary traditions from Vietnam’s three regions in the heart of Hue Ancient Capital.

Not only showcasing beautifully presented dishes, each food stall also serves as a window into the culture of its region, reflecting the stories, people, and traditions behind it. From the bold flavors of northern Vietnam and the rustic tastes of the central region to the rich, vibrant cuisine of the south, all have captivated residents and visitors alike with its colors, aromas, and flavors.

Restaurants, eateries, businesses, traditional craft villages, culinary artisans, and chefs’ associations from Hue, along with participants from Hanoi, Nghe An, Dien Bien, Phu Tho, Hai Phong, Quang Tri, Danang, Binh Dinh, Gia Lai and Ho Chi Minh City, brought together a diverse series of local specialties and renowned regional dishes such as bun rieu cua (crab noodle soup), bun cha (grilled pork with rice noodles), bun mam (fermented fish noodle soup), pho, and many other signature delicacies from across Vietnam.
